JD's Steak Sauce
shallot, finely chopped | 1 | |

Worcestershire sauce | 2 tablespoons | |
brown sugar | 2 tablespoons | |
Dijon mustard | 1 tablespoon | |
unsalted butter | 2 tablespoons | |
Salt and freshly ground black pepper to taste |
Directions
In a saucepan, heat the olive oil over medium heat. Add the chopped shallot and garlic, sauté until they become translucent and soft, about 2-3 minutes. Be careful not to burn the garlic as it can turn bitter.
Pour in the red wine, scraping the bottom of the pan to loosen any bits stuck to it. This process is known as deglazing and it helps to incorporate more flavors into the sauce.
Allow the wine to simmer and reduce by half. This should take about 5-7 minutes.
Add in the beef broth, balsamic vinegar, Worcestershire sauce, and brown sugar. Stir well to combine.
Bring the mixture to a boil, then reduce the heat and let it simmer until it reduces by about half again. This should take approximately 10-15 minutes.
Stir in the Dijon mustard and butter. Continue to simmer the sauce, stirring occasionally, until it thickens to your desired consistency.
Season with salt and black pepper to taste.
Once your sauce has reached the desired consistency and flavor, remove it from the heat. Allow it to cool slightly before using, or store it in an airtight container in the refrigerator for future use.
This steak sauce should be rich, slightly tangy and sweet, and full of depth from the wine and beef broth. It should nicely complement the flavors of your steak without overpowering them. You can tweak the amounts of vinegar, Worcestershire sauce, sugar, and mustard to better suit your personal taste. Enjoy!
