						Guacamole
| red onion, chopped | 1/4 | |

| Cilantro, chopped | 1/4 cup | |
| limes, squeezed juice | 2 | |

| Jalapeno or Serrano, chopped | 1 | |
| Avocados | 4 | |
| Kosher salt | 1 teaspoon | |
| pepper | 1/2 teaspoon | |
| cayenne pepper | 1/2 teaspoon | |
| ground cumin | 1/2 teaspoon | 
Fresh Salsa
| Tomatoes, diced | 1 cup | |
| Red Onion, chopped | 1/8 cup | |
| cilantro, chopped | 1/4 cup | |
| limes, fresh squeezed | 2 | |
| Kosher salt | 1 teaspoon | |
| Pepper, freshly ground | 1 teaspoon | |
| Jalapeno or Serrano, chopped | 1 | |
| garlic, chopped | 1 clove | 
Directions
- Use a large mortar and pestle (if you have one) for the garlic.
 - Combine all ingredients in mortar and use pestle to combine ingredients together.
 - Cover top of guacamole with more lime juice and cover with saran wrap and allow to come together on the counter.
 - Serve with tortilla chips.
 
Fresh Salsa
- Combine all ingredients in a bowl.
 - Cover bowl with saran wrap and allow to come together on the counter. The salt will pull out juice from the ingredients for a nice salsa.
