Double-Double Burgers with JD’s Quad Sauce

Double Cheeseburgers

ground beef (grass-fed 80/20) 4lbs
onion, sliced
hamburger buns 1 package
dill pickles, sliced
iceberg lettuce, shredded
tomato, sliced
salt and pepper
cheese, sliced (American or Cheddar)
yellow mustard

JD's Quad Sauce

ketchup 1/4 cup
yellow mustard 1/4 cup
mayonaise 1/4 cup
sweet pickle relish (good quality) 1/4 cup

Directions

  1. For JD’s quad sauce combine equal parts of ketchup, yellow mustard, mayo and a good sweet pickle relish. Store in fridge.
  2. Form beef into very thin patties.
  3. Heat a griddle or skillet over medium heat; lightly brush with vegetable oil.
  4. Season both sides of patties with salt and pepper. Working in batches if necessary, put the patties on the griddle and cook 3 minutes. Spread about 1 1/2 teaspoons of mustard on the uncooked side of each patty, then flip and top each with 1 slice of cheese. Continue cooking about 2 more minutes.
  5. Double up patties and remove from grill.
  6. Toast the buns on the griddle, split side down. Smear JD’s Quad Sauce on both side of the toasted bun.
  7. Assemble burgers and enjoy!
