Chicken Souvlaki with Tzatziki Sauce
Chicken Souvlaki

Tzatziki Sauce
English cucumber, peel skin and cut out seeds | 1 | |
kosher salt | 1/2 teaspoon | |
clover garlic, grated | 1 teaspoon | |
Greek Yogurt (Fage) | 1 cup | |
fresh dill, chopped | 1 tablespoon | |
lemon zest | 1 teaspoon |
Pita & Salad
Pita Bread, grilled or warmed | 1 bag | |
tomatoes, diced | 1/4 cup | |
red onion, diced | 2 tablespoons | |
romaine lettuce, chopped | 1 head | |
feta cheese (optional) | 1/4 cup |
Directions
- In medium bowl, whisk lemon juice, red wine vinegar, olive oil, oregano, Greek seasoning, salt, and black pepper. Mix in garlic and chicken. Toss chicken to coat evenly, cover, and refrigerate to marinate for 2-6 hours, tossing occasionally.
- While chicken marinates, make tzatziki sauce: Grate or peel meat of cucumber into bowl. Toss with 1/2 teaspoon sat and let sit to drain. Squeeze out water and blend or chop up cucumber and place in small bowl.
- Mix with yogurt, garlic, lemon zest, and dill. Season to taste with salt. Refrigerate until ready to serve.
- Grill chicken and discard used marinade.
- Grill and warm pitas.
- Build souvlaki with warmed pita, tzatziki sauce, chopped grilled chicken, lettuce, tomato, onion and some more tzatziki to top it off.
